These cookies are bright, crisp, and perfectly zesty—you won’t stop at just one.

What You’ll Need:

• 2¼ cups all-purpose flour

• 1 cup sugar

• 1 tsp baking powder

• ¼ tsp salt

• Zest of 2 lemons

• 2 large eggs, room temperature

• 2 tbsp fresh lemon juice

• ½ tsp pure vanilla or almond extract

• ½ cup softened unsalted butter (I used salted—still delicious)

For the glaze:

• 1 cup powdered sugar

• 2–3 tbsp fresh lemon juice

Instructions:

1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

2. Cream the butter and sugar until fluffy (about 3 minutes).

3. Add eggs one at a time, mixing well. Stir in lemon juice, zest, and extract.

4. Sift in flour, baking powder, and salt. Mix gently until soft dough forms.

5. Divide dough in half. Shape each into a 12" x 2" log. Place on baking sheet.

6. First bake: 25–30 minutes, until golden and firm. Cool 10–15 minutes.

7. Slice diagonally into ½" cookies.

8. Second bake: Lower oven to 325°F. Bake cut-side up for 10–15 minutes until crisp. Flip halfway if desired.

9. Mix glaze ingredients and drizzle over cooled biscotti. Let set 15–20 minutes.

Serve with coffee, tea, or just eat them standing in the kitchen (I won’t judge!).
