The Scented Kitchen: One Last Zucchini Recipe (and the Scented Warmer I Can’t Live Without)

My summer excursion into gardening after years away has been so rewarding.

I’m not the gardener—I’m the “preserver.” My husband handles the planting, watering, and harvesting, while I focus on preserving everything so we can enjoy it year-round. Now that it’s late August, we’re still picking zucchini, cucumbers, and tomatoes! Normally, the squash bugs would’ve taken over by now, but thankfully, the birds and frogs have been doing their job and keeping them under control.

The garden’s winding down (I had to tell my husband to stop watering the zucchini and cucumbers—there’s only so many pickles one person can eat!), so I figured it’s the perfect time to share a favorite recipe for using up that end-of-summer zucchini:

Zesty Greek Quinoa Salad

1 ½ c tri-colored quinoa (you can substitute couscous, if preferred)

¼ tsp black pepper

Pinch of salt

2 T lemon juice

3 T olive oil

2 large tomatoes, chopped

1 medium zucchini, diced

½ c fresh basil, cut into strips

1/3 c. red onion, diced

¾ c feta cheese, crumbled

Rinse the quinoa in a fine mesh strainer under cold water for at least 30 seconds to remove the bitter, natural coating. Add 2 ½ to 3 cups of water to a saucepan with the rinsed quinoa, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 13-15 minutes, or until all the liquid has been absorbed and the quinoa is tender and translucent with a visible ‘tail’ around each grain. Remove the pot from the heat and let it rest, covered, for 5 minutes. Then, fluff with a fork. Let it cool before adding the salad ingredients so the vegetables stay crisp and the cheese doesn’t melt!
