What We Served: Cozy Crockpot Beef Stew

Ingredients
- 2–2½ lbs boneless chuck roast, trimmed and cubed into 1- to 2-inch pieces
- 1½ tsp kosher salt
- 1 tsp black pepper
- 2 Tbsp vegetable oil
- 12 oz dark stout beer (I usually use Guinness)
- 3 cups beef broth
- 3 carrots, peeled & cut into 2-inch pieces
- 2 parsnips, peeled & cut into 1-inch pieces
- 1¼ lb baby Yukon gold potatoes, halved or quartered
- 1 yellow onion, diced
- 5 cloves garlic, minced
- 2 tsp fresh sage, minced
- 2 Tbsp beef base
- 2 Tbsp tomato paste
- 1–2 Tbsp prepared horseradish
- 1 Tbsp softened butter
- 1 Tbsp all-purpose flour

Instructions
- Season beef with salt and pepper. Brown all sides in oil over medium-high heat; transfer to slow cooker.
- Pour beer and broth into the hot pan and scrape up browned bits.
- Add vegetables, garlic, sage, beef base, and tomato paste to the slow cooker. Pour in beer/broth mixture. Cook on LOW for 7–7½ hours.
- Mix butter and flour in a pasty ball; stir into stew along with horseradish. Cook an additional 20–30 minutes, stirring occasionally.
- Adjust seasoning, sprinkle with fresh parsley, and serve.
My personal notes:
I rarely remember to start anything eight hours early—so I use my Instant Pot on the sauté setting to brown the meat and then add the ingredients as the recipe directs. I set my Instant Pot to manual, and after a quick 20-minute pressure cook, I do a quick release and transfer everything to the crockpot for a few hours. It turns out perfect every time. It’s also wonderful with venison.
I served ours with homemade bread, plenty of butter, and homemade pear butter. A warm, simple meal, but one that feels like home.
