I’ve often heard, “You look like your mom but act like your dad.” I take it as a compliment and hope I’ve inherited the best of both worlds. Recently, on a quiet Sunday morning, I decided to channel my mom. Balsamic Vinaigrette

Serves 8

Ingredients:

  • 2 cloves garlic, grated or minced
  • 6 tablespoons balsamic vinegar
  • 2 teaspoons Dijon mustard

  • 1 teaspoon dried herbs (I like Italian seasoning)
  • ⅔ cup extra virgin olive oil
  • ½ teaspoon salt
  • Fresh cracked black pepper

Directions:
In a small mixing bowl or jar, whisk together the garlic, vinegar, mustard, honey, and herbs. Slowly add in olive oil while whisking until emulsified. You can also blend using an immersion blender or shake well in a jar with a lid. Add salt and pepper to taste.

Personal tip: I prefer using an immersion blender for a smoother texture. Toss it with greens, feta, kalamata olives, cucumber, red onion, and grilled chicken—dinner is done!
