- 1/8 tsp garlic powder
- Salt, to taste
- 1/8 tsp pepper
- 2 1/2 cups cooked chicken, shredded
- 1/2 cup dried cranberries (chopped, if desired)
- 1/2 cup chopped pecans
- 2 celery stalks, finely diced
- 1/4 cup chives
- 4 large flour tortillas
Instructions
- If using a stand mixer, shred warm chicken with the beater attachment—quick and effortless. Otherwise, shred with two forks.
- Add all ingredients except tortillas to the chicken and mix gently. Adjust seasoning as needed.
- Lay out a tortilla and spread 1/4 of the chicken salad evenly, leaving a 1/2-inch border.
- Roll tightly into a log, wrap in plastic wrap, and refrigerate for at least one hour.
- Unwrap, trim the ends, and slice into pinwheels using a serrated knife.
- Garnish with additional chives, if desired.
