That’s when the conversation turned to blackberries.
During one visit, my new friend asked if I liked blackberries. I laughed and told her I loved them — but they didn’t love me. I was remembering our early days in Missouri, picking wild blackberries and ending up with 163 chigger bites. Yes, I counted. I was miserable and swore off wild berry picking forever.

Blackberry Cobbler

For the berries:
- 5 cups fresh or frozen blackberries
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
For the cobbler crust:
- 1 stick butter, melted (I used salted)
- 1 cup granulated sugar
- 1 egg
- 1 cup whole milk
- 1 cup all-purpose flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt
Preheat oven to 350°. Generously grease a 10x6x2-inch baking dish (a 13x9 works too but avoid a square pan).
Whisk together sugar and egg until smooth. Stir in milk. Add flour, baking powder, and salt — mixing just until combined. Stir in melted butter to create a smooth batter. Spread evenly into the prepared dish.
In a separate bowl, toss blackberries with sugar and vanilla. Spoon gently over the batter without stirring. As it bakes, the berries settle beautifully into the crust while still peeking through the golden top.
Bake 40–45 minutes, until bubbly and golden.
Serve warm — preferably with a generous scoop of vanilla ice cream.
