Recently, we were invited to a gathering of about 25 friends. A facility had been rented, and everyone was asked to bring a dish. I was assigned mashed potatoes — with one special request. A small portion needed to be Alpha-Gal friendly.

Making the Most of Twelve Pounds of Potatoes

Now, back to those potatoes.

I browsed Pinterest and landed on a comforting Cheesy Potato Soup recipe that felt perfect for a snowed-in weekend. A few potatoes went into that. I planned to take a bag on vacation for Airbnb meals. I even experimented with dry-canning some.

But for immediate comfort? Soup won.

 

Instant Pot Cheesy Potato Soup

Serves 8

Ingredients

6 bacon strips, cooked and chopped
½ cup yellow onion, diced
1/3 cup celery, diced
1 tablespoon minced garlic
3 green onions, chopped (I used chives)
3 lbs russet potatoes, peeled and cubed (I used red potatoes and left the skins on)
4 cups chicken broth
1 cup heavy cream
2 cups shredded cheddar cheese (plus extra for garnish)

Instructions

Set the Instant Pot to sauté. Cook bacon until crispy, then remove and drain on paper towels.

Add diced onions, celery, and ½ teaspoon salt. Sauté until onions are translucent. Add garlic and cook one minute more, scraping the bottom of the pot.

Add potatoes, 2 teaspoons salt, and chicken broth. Cook at high pressure for 4 minutes. Quick release the pressure.

Return to sauté mode. Stir in heavy cream and cheese slowly. Using an immersion blender or potato masher, blend to your desired consistency. If needed, thicken with a cornstarch slurry or simply add more cheese.

Ladle into bowls and garnish with cheese, green onions (or chives), and bacon.

It’s comfort in a bowl — warm, hearty, and satisfying.
