Mom’s Orange Juice Cake

Ingredients
- 3 cups all-purpose flour
- 3 tsp baking powder
- ½ tsp salt
- 4 large eggs, at room temperature
- 1½ cups sugar
- 1 cup oil
- 1 tsp vanilla extract
- ½ cup orange juice
- 1 Tbsp orange zest
Instructions
- Preheat oven to 350°F. Grease a Bundt pan with nonstick spray.
- In one bowl, sift flour, baking powder, and salt.
- In another bowl, whisk eggs with sugar, oil, and vanilla until well combined.
- Add dry ingredients to the wet and stir until just combined.
- Mix in the orange juice and zest.
- Pour batter into the prepared pan.
- Bake for 35–40 minutes, or until a toothpick comes out clean.
- Let cool for 10 minutes in the pan before inverting onto a plate.
Optional Glaze (my twist):
Mix powdered sugar with fresh orange juice to taste and drizzle over the completely cooled cake. (Always use fresh juice—you will notice the difference.)
