Pumpkin Bread from Aunt Helen’s Kitchen
Of course, fragrance wasn’t the only thing filling the air. Our sweet treat of the night was Aunt Helen’s pumpkin bread.
I had planned to grow my own pie pumpkins this year, but discovered too late that the seeds I purchased were for jack-o’-lantern varieties. They were watery and fibrous—not ideal for baking. Next season, I’ll be planting Sugar Pie or Winter Luxury pumpkins, which are known for their sweet, stringless flesh. For now, a can of organic pumpkin did the trick, and I was surprised by how much richer it tasted than the standard canned version.


Pumpkin Bread Recipe
- 3 cups sugar
- 1 cup oil
- 4 eggs
- 1½ tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- ⅔ cup water
- 2 cups cooked pumpkin
- 3⅓ cups flour
- 2 tsp baking soda
- Pecans or English walnuts, optional
Instructions:
- Combine sugar and oil in a large mixing bowl. Add eggs and beat until fully blended.
- Mix dry ingredients separately, then add alternately with water.
- Stir in pumpkin.
- Pour into three well-greased 7x4-inch pans.
- Bake at 350°F for about one hour to 70 minutes.
- Cool slightly before removing from pans.
