As soon as campsites opened for spring reservations, we booked ours without hesitation. At the time, we had no idea we’d be stepping into a whole new adventure—upgrading our camper.
In February, I listed our 30-foot tongue pull, and it sold within a day. Just like that, we were on the hunt for its replacement. A Simple Recipe for Stormy Nights
This recipe is one of those simple, feel-good favorites. Clean ingredients, easy to make, and yes… “kid tested and mother approved.”
Chicken Nuggets
12–14 oz boneless, skinless chicken breast
1 medium potato, peeled and chopped
½ tsp garlic powder
½ tsp onion powder
1 thick slice fresh onion, broken up
Salt and pepper
Panko bread crumbs
Place all ingredients (except the panko) into a food processor and blend until finely minced.
Line a baking sheet with parchment paper (or use an air fryer). Scoop spoonfuls of the mixture and shape into nuggets. Dredge in panko and place on the baking sheet. Lightly spray or brush with oil.
Bake at 425° for 12–15 minutes. Flip, oil the other side, and bake an additional 5-10 minutes or until golden and cooked through. My preferred method in the camper is in my air fryer. I set it on 400° for 15 minutes, then flip them over and air fry for another 5-7 minutes or so.
Optional dipping sauces: Ranch, bbq sauce, ketchup, or my favorite, a simple honey mustard (equal parts honey, yellow mustard, and Dijon mustard).
Even on a stormy night, there’s something grounding about a warm meal, a cozy space, and a scent that makes it all feel complete.
