Strawberry Shortbread Bars

Serves: 12

(A variation inspired by Dina Cooks on Pinterest)

For the crust:

  • 1 cup butter, softened
  • 2 ¼ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 egg, room temperature

For the topping:

  • 1 jar strawberry jam (9–12 oz)

Instructions:

Preheat oven to 350°F.

Using an electric mixer on low speed, combine butter, flour, sugar, and egg until the mixture becomes crumbly.
Reserve 1½ cups of this mixture for the topping.

Butter a 13×9-inch baking pan and press the remaining mixture evenly into the bottom to form the crust.

Spread the strawberry jam evenly over the base layer.
Crumble the reserved mixture over the top, pressing lightly to help it adhere.

Bake for 30–40 minutes, or until the top is golden brown.
Allow to cool completely before cutting into squares.

Serve with whipped cream, ice cream, or simply alongside a cup of tea.
