A Comforting Classic from the Kitchen

With the atmosphere set and my mindset refreshed, it was time to turn to what I had planned all along—making soup. This Chicken Pot Pie Soup delivers everything comforting about the classic dish, transformed into a creamy, cozy bowl perfect for colder days.

 

Chicken Pot Pie Soup

Ingredients

  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • 1/4 cup flour
  • 2 cups milk of choice (unsweetened almond, 1%, 2%, or whole)
  • 2 cups low-sodium chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 3 celery ribs, diced
  • 1 medium yellow onion, diced
  • 4 large carrots, diced
  • 4–5 cloves garlic, minced (or about 1-2 Tbsp jarred)
  • 4–5 sprigs fresh thyme (or 1/4 tsp dried)
  • 1/4 tsp turmeric (optional, but recommended)
  • Salt and pepper, to taste

Instructions

  1. In a Dutch oven or large pot, heat olive oil over medium-high heat.
  2. Add carrots, celery, and onion. Season lightly with salt and pepper and cook until softened and onions are translucent.
  3. Add garlic and cook briefly until fragrant.
  4. Melt in the butter, then stir in the flour, cooking for about 30 seconds to remove the raw flour taste.
  5. Gradually stir in milk and chicken broth. Add thyme sprigs and turmeric.
  6. Bring to a gentle boil, then reduce heat to low and simmer for 15–20 minutes, stirring occasionally, until thickened.
  7. Add chicken, peas, and corn. Simmer just until heated through.
  8. Adjust salt and pepper to taste before serving.

Personal Notes:
I use unsweetened almond milk every time. For convenience, I often substitute a 12-ounce bag of frozen mixed vegetables for individual vegetables, but don’t leave out the onions and celery! Don’t skip the turmeric—it adds a beautiful golden color and an extra nutritional boost.
